Taking my Prowler in for an inspection at some point this month. Figured I'd do that so that they could see if there are any open recalls. Is there any other routine items I should have them check?

2000 Prowler with 8k miles on it

Have them check the ball joints - they can fail suddenly and lead to a crash. An inspection of these is always a good idea any time the car is on a rack. Here is an older forum for more information: http://www.prowleronline.com/ubb/Forum1/HTML/013290.html

At least every 84 month (7 years) independently of the mileage.

Or you take the risk? :-) I would not........
