I inject it with italian seasoning. You need to add a little more time to the cooking when you do it. |

quote: Alley Cat here to help out: First, wash off all of that nasty bacteria with fresh water. Next, "stuff the hole" [this may be difficult for you] with dressing. Marinade in Jack Daniels for one hour. Remove bird and DRY RUB [your hands are use to this :] for 90 minutes. Place in pre-heated grease fryer and wait until that little thing pops up to signify that an erection is complete and ready. Remove burnt bird from the grease fire and extinguish the flames. Let cool for 15 minutes,,,,,,carve off wings, drums, back, and neck and serve to your freeloader guests. This will leave you with the breast and thighs to enjoy yourself.

The marinate is injected into the bird. Be sure to do this 24 hours before you are going to cook it. Make sure there is no ice in the bird when you immerse it in the cooking oil. In my opinion the oil to use is peanut oil. The marinate is a matter of taste. Before your ready to cook put the bird in the cooker and pour water in a gallon at a time. This will tell you how many gallons cooking oil you will need to use. You have to pour the oil in and heat to cooking temperature before immersing the bird. |

Just returned from a great tailgate party at the Meadowlands, watched the Jets destroy the Seahawks with CT Prowler. I bought a 17.5lb bird, my guys had the peanut oil hot when I got to the parking lot, in it went ,no rubbing, no seasoning.1 hour later, we were feasting, man was it good. Everyone should try it, and by the sound of it , there are alot of ways to get it done. ------------------ |

Gary, I have only had the deep fried turkey once and it was great. HOWEVER, I would tell you that the legs and wings get burned before the rest of it is finished. I would check that closely and possibly remove them before cooking or at least take them off the bird before finishing the cooking. |

I use the cajun injector butter flavor injected on the inside of a 15lb turkey for 11 people. I also use a dry rub on the outside of salt, red pepper & black pepper... 3 min per lb at 350 to 375 degrees... I usually put the turkey on the stand and leave in the refrigerator the night before in the upright position... I've cooked them with only one hour of marinating & 24 hours and really can't tell the difference... The combination of dry rub & injection takes care. The exact timing of the cooking and temp of the oil probably has as much to do as the seasoning... I've never had a bad fried turkey... However, it has to be eaten within one hour of cooking... It doesn't taste good warmed up or cold... After you take it out the oil, let it set for 30 minutes with a piece of aluminum foil drapped over like a tent (not wrapped tight) before you carve. Serve immediately to eat. Now, my favorite part is eating the pieces of the carcass...
