why is it that if you put a bunch of ice cubes into a glass and pour warm Diet Coke over them that it foams up like crazy, but if you partially fill an empty glass with the same warm Diet Coke and then drop in a bunch of ice cubes you get virtually no foam. Is there some karma at work here that I don't understand? pdq |

Pumpkin..... ...the reason is, the Diet Coke you have poured in the glass has already lost much of it's fizz before you drop in the ice....the ice is only able to touch a small amount of the cola at a time(surface area of the cube) releasing the CO2 in smaller amounts.... ....when pouring the Diet Coke over the ice, there is a greater surface area of the cola coming in contact with the cold surface(Coke calls this supercooling) plus the regular amount of CO2 escaping, causing a far greater amount of fizz to escape.... ...Coke recomends their product be served at 34 degrees, the colder it is served, the less CO2/fizz escapes making the drink have that distinctive sting... ...Diet products fizz more than regular products because the heavier sugar in the regular colas slows the escape of the CO2....5 gallons of Coke syrup weighs 10 lbs more than 5 gallons of diet syrup..... ...many old timers swear that Coke was always better in glass bottles....truth is, the bottles with the cork lined caps did allow a small amount of fizz to escape before being sold, actually producing a flatter(not as much bite) product than a can....the perfect Coke is a 32-34 degree can drink....all the fizz/bite/sting it was meant to have....most C-stores these days barely cool their drinks to 45 degrees, so when you open the lid they fizz more leaving you a flatter drink.... ....fountain Cokes are the most inefficent package for the cola products....uncooled syrup mixing with room temperature water and fizzing before it hits the ice....then it is supercooled when it hits the ice causing about 80% of the carbonation to escape, leaving you a very flat drink..... ...4 years of college, and this is all I learned ...actually, I was a distributor of Coca Cola products for 23 years, and our wholesale company was also a repair/service arm for Coca Cola USA, the fountain syrup division.....we went thru a semi load, 20 tons, of Coke syrup every 4 working days, and we sold several thousand cases of can drinks per week....hard work... |
